Well everyone we did it! We made it to the Victoria long weekend! I hope everyone has amazing plans this weekend! I know I’ll be super busy this weekend with my birthday, my anniversary with my adventure buddy/beau, and the 1st birthday of my little fur baby! When I have super busy weekends like this (or even a busy week) I tend to forget breakfast and just get up and start my day! I know it’s so bad because an hour into my errands, my stomach is growling so loud and I begin to get a little hangry!!! So a trick that I’ve had to learn to do is pre-make breakfast so I can grab it as I go out the door! So below is a recipe a friend gave me for over night oats and it is AMAZING! It is like eating dessert for breakfast, and its also so filling I don’t get hungry until lunch!
This is the recipe that I have fiddled around with to make it work best for me:
- ½ cup of steel-cut oats
- 1 ½ cups of coconut milk
- ½ cup of vanilla yogurt
- 2 ½ tablespoons of chia seeds
- 1 tablespoon honey – to taste
- ¼ cup of fruit
So the first thing I do is grab a mason jar. Then I just throw in all the ingredients, put the lid on, and give it a good shake. Just make them the night before and leave it in the fridge over night. You can make one or multiple ones for the week. This is actually so simple that even if you suck at cooking, you can be good at this. The best part of this recipe is that you should already have most of the supplies without having to go to a specialty health food store to find something.
With this recipe really make it your own, if you find the steel cut oats are too hard, then try using rolled oats for a better texture. You can also always substitute honey for maple syrup or even change up the flavor of the yogurt. Honestly there are so many modifications you can make to this recipe its astounding.
